Mix up something special!

Peach Cobbler

Here's our delicious recipe for a traditional Palisade peach cobbler! With a delicious pastry bottom and top, it's well worth the effort! In a hurry? You can also check out our recipe for Jiffy Peach Cobbler. We love them both!

You will need:
  • Pastry ingredients
    • 2 cup Flour 
    • 1 Tbsp Sugar 
    • 1 tsp baking powder 
    • 1/2 tsp salt
    • 2/3 cup Shortening
    • 3 to 4 Tbsp cold water
  • Filling ingredients
    • 4 cups of fresh sliced peaches
    • 1/2 cup water
    • 1 cup sugar
    • 2 Tbsp flour
    • 2 Tbsp butter or margarine
    • 1/8 tsp cinnamon
    • Sprinkle of nutmeg

Instructions:
  • Combine first 4 ingredients.
  • Cut in shortening with a pastry blender until mixture resembles coarse meal
  • Sprinkle cold water 1 Tbsp at a time evenly over the surface
  • Stir with a fork until all dry ingredients are moistened.
  • Shape pastry into a ball & then divide it in half
  • Roll out half of pastry into a 10" square
  • Place into an 8" square pan, fitting evenly around bottom & sides of pan
  • Prick bottom & sides of pastry with a fork and set aside
  • Combine peaches & 1/2 cup water in a medium saucepan, and Cook until peaches are tender
  • Combine 1 cup sugar, 2 Tbsp flour, 1/8 tsp cinnamon, 2 Tbsp butter, and nutmeg
  • Add sugar mixture into the saucepan and stir in
  • Pour peach mixture into the prepared pastry
  • Roll out remaining half of pastry, and place on top of the peach mixture
  • Bake at 350*F for 30 minutes until crust is golden brown
  • Enoy!

Becky's Perfect Peach Pie Filling

We LOVE peach pie here at the farm, and Becky has perfected the art over the years! We are excited to share her recipe with all our friends here on our recipe blog. Give it a try!

You will need:
  • 11 peaches
  • 1 Cup Sugar
  • 3/4 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 3 tbsp Flour
  • 2 tbsp Tapioca Flour (or substitute for Corn Starch)

Instructions:
  • Dice approx. 11 Peaches into bite sized pieces
  • Mix all ingredients into mixing bowl
  • Heat over medium heat until it thickens up into a pie filling consistency
  • Pour the pie filling mixture into pie crust of your choice
  • If canning your pie filling add:
    • 1/2 tbsp Lemon Juice
    • 1/8 cup Sugar (to offset lemon flavor)
  • ​Enjoy!

Peach ICed Tea

What's more refreshing than a tall glass of iced tea in the summer? If you want to add a sweet twist to your favorite tea, give this delicious Palisade peach recipe a try!

You will need:
  • 4 Cunningham peaches, skinned and diced
  • 1/2 Cup Sugar
  • 1/2 Cup Water
  • Iced tea

Instructions:
  • Add diced peaches, sugar and water into a sauce pan
  • Cook mixture on medium heat to create a peach syrup
  • Stir in about 1/8 Cup of peach syrup into your favorite glass of unsweetened tea (to taste).
  • Refrigerate unused syrup for later
  • Enjoy!

Grilled Peaches

There are so many delicious ways to enjoy Cunningham peaches! This recipe is one of our favorites, a great way to add a bit of sweetness to your backyard barbecue! Give them a try!

You will need:
  • 2 Frozen peach halves per desired serving (fresh peaches will slip through the grates)
  • Cunningham Honey
  • Cinnamon (optional)

Instructions:
  • Place the frozen peach halves on a hot grill, flat side down for approximately 3 minutes
  • Flip peaches over
  • Drizzle each peach half with a spoonful of Cunningham Honey
  • Sprinkle with cinnamon if desired
  • Continue grilling another 3 to 5 minutes
  • Remove from grill and serve warm
  • Enjoy!

Freezing Peaches in Halves

While our favorite (and easiest!) way to freeze our Palisade peaches is to freeze them whole (check out our Easy Freezey Frozen Peaches recipe), freezing peaches in halves is also a great way to freeze your peaches to enjoy at a later date!

You will need:
  • Cunningham Peaches
  • Gallon freezer bags (generally 1 bag can hold 6 peaches)

Instructions:
  • Ensure that the peaches are ripe prior to freezing
  • Gently wash the peach skin
  • Cut the peach in half and remove the seed
  • Place the peach halves into a Gallon Ziploc freezer bag, typically 12 halves per bag
  • Place into freezer
  • When ready to eat a peach or make a recipe take out only the number of peaches that you will need to use that day
  • You're all set to eat on a bowl of ice cream, place on the grill, or throw into a smoothie!

Jiffy Peach Cobbler

During harvest on the farm, we are usually so exhausted that we don't have time or energy to bake many things with our Palisade peaches. Mostly, we just eat them fresh for breakfast or lunch (or dinner or dessert). We have a lot of peaches on hand ;)

THIS recipe is the exception, something we love so much that it's worth the trouble to make during harvest with fresh peaches (or even during winter using our Easy Freezey Frozen Peaches). It's a simple family recipe handed down from Carolyn's parents, Frank and Treila.

You will need:
  • 4-5 Cunningham Peaches, ripe (ripening instructions here)
  • 6 tbsp. butter (3/4 of one stick)
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • Dash of salt
  • 3/4 cup milk

Instructions:
  • Wash, peel, and slice peaches in a bowl.  Set aside.
  • Heat oven to 375°F
  • Place butter in a 13x9 baking pan and place pan into the heating oven
  • In a bowl, combine dry ingredients
  • Stir in milk until mixed
  • Once butter is hot, carefully remove the baking pan from the oven
  • Pour in the flour mixture, then top with peaches (and optional blackberries), distributing evenly
  • Place back into the oven, baking at 375° for 45 minutes or longer (crust should turn golden brown at the top, it can take a while!)
  • Once golden brown, remove from oven and let cobbler cool for at least 15 minutes
  • Enjoy warm with vanilla ice cream!

Monica's Perfect Peach Smoothie

We can't get enough of these delicious peach smoothies! They're simple, refreshing, pack a protein punch, and are so easy to make! Try one for a delicious kick-start to your day.

You will need:
  • 3-4 Cunningham Peaches
  • 1 Ripe Cunningham Pear (optional)
  • 1/2 cup vanilla yogurt of your choice
  • 1/2 cup orange juice
  • Cunningham Honey (or sugar) to taste
  • Ice
  • A blender

Instructions: 
  • Peel and half peaches and place in blender
  • If using pear, peel and add that in, too
  • Add yogurt and orange juice
  • Add sugar or honey to your taste
  • Blend well, then fill blender with ice and blend again, until smooth 
  • Enjoy!
  • For a special twist, try adding one of the following:​
    • ​Cinnamon
    • A banana

easy freezey Frozen Peaches

We are often asked what's the best way to freeze our peaches. While you certainly can peel them, cut them up, and freeze them with some sugar and lemon juice or Fruit Fresh, we've always been far too busy during peach harvest to do that ourselves! Instead, we've found this simple and super easy way to freeze our Palisade peaches. This is a great way to preserve your peaches if too many soften at once. Enjoy!

You will need:
  • Ripe Cunningham Peaches
  • Large freezer bags (we like the gallon size with a slider zip)

Instructions:
  • Wait for your Cunningham peaches to reach your desired level of ripeness (instructions here)
  • Once ready, place as many whole, unpeeled, unwashed Cunningham peaches as you can into each freezer bag.
    • That's right! No need to wash, peel, or cut up. All you have to do is place them in the bag whole.
    • Using this method, it's important not to wash your peaches beforehand. Washing whole peaches before freezing will give them a bad flavor. 
  • Press out as much air as possible, close the bag, and place your filled freezer bags in the freezer. You're done!
  • When ready to use your frozen peaches, take out only as many as you are ready to use
  • Simply run each peach in your hand under warm water at the kitchen sink, gently rubbing the skin.
  • As the skin thaws, it will begin to slough off, leaving you a delicious Cunningham peach to eat or bake with!
  • Cut peach in half and remove the seed
  • You're all set to eat with a bowl of ice cream, or place into a delicious peach recipe of your choice!​
