Mix up something special!

Peach Cobbler

Here's our delicious recipe for a traditional Palisade peach cobbler! With a delicious pastry bottom and top, it's well worth the effort! In a hurry? You can also check out our recipe for Jiffy Peach Cobbler. We love them both!

You will need:
  • Pastry ingredients
    • 2 cup Flour 
    • 1 Tbsp Sugar 
    • 1 tsp baking powder 
    • 1/2 tsp salt
    • 2/3 cup Shortening
    • 3 to 4 Tbsp cold water
  • Filling ingredients
    • 4 cups of fresh sliced peaches
    • 1/2 cup water
    • 1 cup sugar
    • 2 Tbsp flour
    • 2 Tbsp butter or margarine
    • 1/8 tsp cinnamon
    • Sprinkle of nutmeg

Instructions:
  • Combine first 4 ingredients.
  • Cut in shortening with a pastry blender until mixture resembles coarse meal
  • Sprinkle cold water 1 Tbsp at a time evenly over the surface
  • Stir with a fork until all dry ingredients are moistened.
  • Shape pastry into a ball & then divide it in half
  • Roll out half of pastry into a 10" square
  • Place into an 8" square pan, fitting evenly around bottom & sides of pan
  • Prick bottom & sides of pastry with a fork and set aside
  • Combine peaches & 1/2 cup water in a medium saucepan, and Cook until peaches are tender
  • Combine 1 cup sugar, 2 Tbsp flour, 1/8 tsp cinnamon, 2 Tbsp butter, and nutmeg
  • Add sugar mixture into the saucepan and stir in
  • Pour peach mixture into the prepared pastry
  • Roll out remaining half of pastry, and place on top of the peach mixture
  • Bake at 350*F for 30 minutes until crust is golden brown
  • Enoy!

Best cobbler recipe! 2020 was the first time I bought peaches from the peach truck in Amarillo. I prepared 6 + highly rated peach cobbler recipes and this was by far the favorite of my 'testing' volunteers. I now make this filling for the freezer and use for both cobblers and pies. I highly recommend Vietnamese (Saigon) and/or Indonesian cinnamon rather than the more bland grocery store variety. I've found the pastry pretty easy to handle with my bake buddy silicon mat.
